The Garden begins....


It's midsummer and the garden has been producing for us since the snow melted months ago. Fall planted spinach came peeping through the snow, the Eqyptian onions are ever present and push skyward even as the snow melts as well. So it begins.

Now it the time for the harvesting, preparing, eating and storing of all our growing goodies.

We were all away for a couple of weeks the end of June and the beginning of July. I was shocked when I returned to find our garden plots in http://www.windhamcommunitygarden.org/ a riotous plot of growing vegetables.

Then soon the leeks began to blossom and once there are seeds they will harvested for seeds to b e used with balsamic vinegar, olive oil, salt, pepper and a little touch of maple syrup for the best ever Leeky Vinegarette.

And now the harvest serious begins and the dehydrator runs daily......

Last night it was Eguptian Walking onions that break down into stems and small strong onion bulbs - a little goes a long way. The tiny bulbs that form at the top of the plant are being saved this year for the Common Ground Seed Savers Swap table. I greatly appreciate the herb scissors Erin gave me a couple of years ago. I use them all the time.
